Sort of. You can use the SABRE plugin so users can create an account and choose their own user name and password, but their login info won’t be name and email. it will be user name and password.

is there a plugin or anything that could email him his login details once he’s registered

This is built into WordPress but there are plugins that let you customize the new user email.
